Il est temps de transformer pour conserver les choux rouges.
Pour se faire, j’ai suivi pour la première fois une recette d’un pote: rajouter 2% en poids de sel dans le choux rouge émincé. Insérer en tassant bien dans des bocaux en verre.
En un jour, le niveau d’eau dans les bocaux a atteint le niveau du choux. J’ai rajouter un mini bol en verre pour bien tasser le choux, et pour qu’il se trouve toujours sous le niveau de liquide.
